Nicknamed by her older brother before she could walk and, a few moons later, still called “Binky" for better or for worse, Beth "Binky" Neels loves to cook. Any kind of cooking!  From baking to canning to back yard parties, you name it!  She styled her blog a Carnivalbecause the name reflects an appropriate conglomeration of treats.

Beth received her bachelor’s degree from Cornell University in ornamental horticulture and she uses her knowledge of plants to grow a plethora of great fruits and vegetables. She starts her plants in January and February so that by planting time in May, she has huge plants that produce fruits within their first month in the ground.  This gives her a tremendous jump on the season, which you can see for yourself in her blog's “Farm To Table” section.

Beth's "boys" - her husband and 2 sons - love to hunt and the whole family loves to fish. (Beth can out fish the guys on a good day! ) Beth devotes an entire section of her blog to “Field To Table” recipes that are made with the fresh ingredients for which the family hunts and fishes.

Beth answers the age old question, “What’s for dinner?” with unique and fresh recipes, many of them old favorites with a healthier spin and lots of them Beth's original creations.
