Caro’s Roast Lamb with Marmalade


Ingredients


1 leg of lamb


Salt


Rosemary


Garlic


Oil


1 jar of marmalade


 


Cut slits in lamb and rub in salt the night before. Wrap and refrigerate.


Remove from the fridge an hour before cooking.


Stud the lamb with garlic and rosemary.


Heat your oven to normal roasting temperature.


Pour a cup of marmalade over the lamb then continue to baste while it cooks.


Cook your lamb as you normally would. You can make a gravy if you desire.
