In this episode, I show you how to cook mashed potatoes and gravy Big Momma style, and also I sprinkle in the recipe for my candied yams.  There are some hidden dangers when eating mashed potatoes- hot!  There are hidden dangers when trying to peel potatoes and yams. I hope you enjoy this episode as much as I had, telling you how to make it.


Mashed Potatoes



  • 5 lb bag of Russet potatoes, well-scrubbed

  • 3 tablespoons kosher salt, divided

  • 2 sticks (8 ounces) unsalted butter

  • 2 cups Whole Milk, diluted Canned Milk or Half n Half

  • Ground Black Peppercorns or ground Pepper to taste

  • Additional Butter is optional  and totally up to yo taste.


UTENSILS



  • Large pot

  • Colander

  • Two smaller pans for heating yo Butter & Milk

  • Rubber Spatula or Wooden Spoon and a

  • Medium Paring Knife

  • Potato Masher


Made from scratch Brown Gravy



  • Half a cup of flour

  • 3rd cup of oil

  • 1 cup water

  • 2 teaspoons Zipp Le’s Gourmet All Purpose Seasoning


UTENSILS



  • 10 inch cast iron skillet makes the best gravy Or

  • 10 inch Deep nonstick Skillet/Saucepan

  • Large Stainless Steel  or Wooden  Fork, Spoon or Spatula


Candied Yams



  • 5 – 6 Sweet Potatoes

  • Half a cup White Sugar

  • Half a cup Brown Sugar

  • Half stick Butter ….NO MARGARINE please

  • Half teaspoon  cinnamon

  • 1/8 teaspoon Nutmeg

  • 1 Teaspoon Vanilla


UTENSILS



  • Large Pot

  • 1 cup

  • Teaspoon

  • Paring Knife

  • Potato Peeler
