World’s Best Pickled Jalapeno Poppers - by Jan Moore
Ingredients:
2 large cans of whole pickled jalapenos
1 Package of your favorite bacon
1 package of cream cheese
1 cup brown sugar
½ tablespoon of chili powder
½ tablespoon of cumin
1 teaspoon of kosher salt
¼ teaspoon coarse black pepper
1 teaspoon garlic
Instruction
- Mix brown sugar, chili powder, cumin, salt, pepper and garlic in a bowl and set it aside to use as your rub.
- Cut the jalapenos length wise.
- Stuff the peppers with cream cheese.
- Wrap the cream cheese stuffed jalapeno with ½ strip of bacon (make sure the bacon wraps around the popper at least 2x)
- Secure the bacon with a toothpick.
- Coat your bacon wrapped poppers in the rub you mixed earlier.
- Cook on indirect heat @250 degrees for about 30-40 minutes (until the bacon gets cooked to your liking)
