RECIPE: Chimichurr-ish


*This adaptation of the herbaceous South American sauce. Chimichurri is a delicious way to use up lots of herbs. Use this as a guide, but have fun switching it up to your tastes and what you have on hand.



  • 1 Cup rough chopped Herbs (make sure you are measuring the chopped herbs, not unchopped).  This can be a mix of almost anything on your stand.  Traditionally this is made heavily of parsley, a small amount oregano, maybe cilantro.  You can do basil, garlic chives, thyme, mint is delicious.

  • 1 Cup good extra virgin olive oil

  • 1/2 Cup Vinegar.  Traditionally, this would be red or white wine vinegar, but any lighter vinegar you have will work. Sherry, champagne, even rice wine.

  • 3-4 garlic cloves

  • Salt & fresh pepper to taste

  • Extra credit: Jalapeño or red pepper flakes for spice. Dried oregano (2 tsp) if you didn’t have fresh to add. A little citrus, lemon or lime, either some zest or a small squeeze.  If you love citrus, you can add more, just pull back a bit on the vinegar.


Throw everything in a blender or food processor & pulse to desired consistency.  Traditionally chimichurri is on the chunky side.  This can be accomplished by finely chopping everything by hand or by being careful to not over mix in a blender.  I like it a little smoother, so I just use a blender.  This can be stored in the fridge for at least a week. I like to live on the wild side and will keep it a few weeks. Not dead yet!
