Dale Talde latched onto raw bar seafood culture like a barnacle to a pier when he came to New York City in 2005. He likes them raw, but I prefer them fried, like my guests in the lightning round of questions that is the Stir Fry.

Talde put on a game face as the questions came his way, but I detected some flinching when I asked him about his vacation plans this year.

He had to repeat the question.  "Vacation plans?"  

This is clearly someone for whom a vacation is a foreign concept, like weekends are to the landed gentry in the hit PBS series, "Downton Abbey." The Dowager Countess can't imagine working Monday through Friday.  Talde, whose own empire includes Talde,Pork SlopeandThistle Hill Tavern, can't imagine leisure time.

With the Stir Fry timer ticking, Talde finally said Italy was his vacation destination this year, but somehow, I don't believe he'll get past Coney Island this summer. 

I do believe him when he says his favorite kitchen chore is ordering someone else to do it.  How Downton of him.
