Sarah Kessans is a research fellow at the University of Canterbury.  In this interview we talk about her work as a synthetic biologist and discuss genetic engineering and the ethics of change as well as how it all actually works at a practical level.  We also talk about her application to become an astronaut to NASA and what it was like to go through that process.

This is one of 48 interviews with people doing things a little differently in a wide variety of areas.  Check some of the others out at www.seeds.libsyn.com

A brief note from Sarah: "in relation to the Arctic apples - I mentioned that the enzyme that they knocked out oxidises sugars, when it actually oxidises polyphenols ... https://www.arcticapples.com/arctic-apples-r/introducing-nonbrowning/"
