Today, we are showing you how my mom made zucchini fritters with a raw vegan sweet and sour dip and vegan saltfish inspired by The Mindful Plate on YouTube.


But before we get there, I will take you in the kitchen with me as I make a salad using nori. Nori was what helped make the heart of palms in the vegan saltfish taste fishy.


Nori is a seaweed that comes from the ocean. It is high in prebiotic fiber that you don’t get in other land plant foods. Nori is an excellent source of iodine for thyroid health and vitamin B12.
