The mushroom is a great alternative for meat in the Plant-based world and has been known to be called ‘Poor man's meat’. Jeff Chilton has 40 years of mushroom growing experience, and is a leader in the organic mushroom distribution with his company Nammex. He studied ethno-Mycology in the sixties and after spending 10 years cultivating mushrooms he travelled around China and brought the first organic mushroom production seminar to them. China produced 85% of the mushrooms we consume around the world! Today with Jeff, we are just touching the surface of the growing, utilising mushrooms and how to introduce them into your world. Jeff tells us about his history, teaches us about how the mushroom grows, how the mushroom went from a ‘non-food’ in the 70’s, to a medicinal food with different health benefits and which mushrooms are best to eat.
