I decided to figure out a way to enjoy the holiday season while still being successful in my weight loss journey. In this episode I talk about my thought process before the holidays and how I approach them, whether I want to gain, lose or maintain.

Spadafora Family Nut Roll Recipe
PASTRY
7 cups all purpose flour (2 lbs flour)
1 3/4 cups butter, melted (3.5 sticks)
3 eggs
1/2 pint sour cream
1 packet yeast = (rapid rise) 2 ¼ tsp
2 tsp powdered sugar
1 tsp salt
1 tsp vanilla
Mix sour cream and yeast: add flour and rest of ingredients. Knead by hand until homogeneous
FILLING (enough for 3 times pastry)
4 lbs. nuts (pecans or walnuts) walnuts are better and cheaper
1 cup butter
8 oz. honey
1 cup sugar
1 oz. powdered cinnamon
Approx. 1/2 cup milk - as needed for moisture/consistency
Pinch and roll about 1/2" balls of pastry
Coat with granulated sugar
Roll flat with granulated sugar
Place about 1/2 tsp filling on pastry and roll into crescent
Bake on greased (or Teflon coated) cookie sheet at 350° until golden light brown (about 14-18 minutes depending on size and oven)
