In this episode of the Smoking Hot Confessions BBQ Podcast, I get into it with Paul King, the Head Pitmaster of The King and his Q. Last year was their very first year on the competitive BBQ scene and what a year it was! But Paul had a few tricks up his sleeve that I'll let him fill you in on!

I learn all about Paul's history in the food industry and the BBQ scene before diving into his 2019 year on the Australian KCBS competitive BBQ circuit. From there we dive into what he's got planned for 2020. Then, before we round out the show, Paul gives us a step by step breakdown of how he likes to do his pork butts. And remember, this is KCBS BBQ style we're talking about here, where pork butt is a category all to itself. Listening to this man's secrets absolutely made me hungry and want to go light up my own grill!
