Big Boy BBQ are big in the Australian BBQ scene and it’s obvious to see why. The brainchild of pitmaster Lance Rosen, Big Boy BBQ is just one piece of his multi-pronged take on the BBQ industry. Firstly, there’s the Big Boy BBQ Competition BBQ team, which is usually Lance running solo, at KCBS competitions all over the country and in the United States. Then there’s the Big Boy BBQ restaurant, the Southern Grace Diner, and of course his cookbook ‘Temples of BBQ’. The latter winning the international ‘BBQ Cookbook of the Year’.

In this episode we get into Lance’s background and how he got into the BBQ. We hit each of his different BBQ projects mentioned above. I choke on my jealousy as we talk about his most recent  trip to Texas for Camp Brisket. And we close out the episode with a lesson from Lance on the importance of, and how-to, select the best ingredients for your cooking adventures - whether they be in the backyard or on the competition circuit.
