FABLE is a mushroom-based meat substitute, backed by Heston Blumenthal and is set to take the world by storm. I’m not gonna lie - I was super skeptical. But I was also intrigued. It’s not every day that a BBQ podcast is contacted about a meat substitute so I had to admire the guys cahones. He essentially threw his gauntlet at my feet in a challenge. 

So we emailed back and forth for a while and it turns out, Jim is a BBQ-lovin’ good ole boy from Texas who just happens to be a mushroom scientist. So a guy with this background is bringing me a meat substitute? I knew it was going to be a good story. And you will too!
